Ingredients

Bottom Layer (chocolate)

  • cup all-natural creamy peanut butter
  • tablespoons melted coconut oil
  • 1 teaspoon vanilla extract
  • 3 tablespoons unsweetened cocoa powder
  • 2 tablespoons maple syrup

Top Layer (peanut butter)

  • cup all-natural creamy peanut butter
  • 2 tablespoons melted coconut oil
  • 1 teaspoon vanilla extract
  • 2 tablespoons maple syrup
  • to taste Himalayan sea salt

Instructions

  1. Line a muffin tin with 12 muffin liners and spray with coconut oil cooking spray.
  2. In a medium bowl, mix all ingredients for the bottom layer until smooth.
  3. In another medium bowl, mix all ingredients for the top layer until smooth.
  4. Scoop a heaping ½ tablespoon of the chocolate layer into each muffin cup and shake to level.
  5. Add a heaping ½ tablespoon of the peanut butter layer on top and shake to level.
  6. Sprinkle each cup with Himalayan sea salt.
  7. Freeze for 30 minutes or until firm.
