Ingredients

Chocolate Layers

  • ½ cup melted coconut oil
  • cup natural creamy peanut butter
  • ¼ cup pure maple syrup
  • ½ cup cocoa powder
  • ½ tsp vanilla extract

Peanut Butter Filling

  • ¼ cup melted coconut oil
  • cup natural creamy peanut butter
  • ¼ cup pure maple syrup
  • ½ tsp vanilla extract

Instructions

  1. Melt the coconut oil for the chocolate layers in a small pot over low heat.
  2. Remove from heat and mix in peanut butter, maple syrup, cocoa powder, and vanilla until smooth.
  3. Divide half of the chocolate mixture into 12 silicone muffin cups.
  4. Set aside the remaining chocolate mixture.
  5. For the peanut butter filling, melt the coconut oil in a small pot.
  6. Add peanut butter, maple syrup, and vanilla, whisking until smooth.
  7. Pour a tablespoon of the peanut butter mixture into each muffin cup.
  8. Cover each with the remaining chocolate mixture.
  9. Freeze for 30 minutes, then remove from cups and store in an airtight container.
