Healthy Homemade Peanut Butter Cups

Peanut Butter Filling

Instructions
- Melt the coconut oil for the chocolate layers in a small pot over low heat.
- Remove from heat and mix in peanut butter, maple syrup, cocoa powder, and vanilla until smooth.
- Divide half of the chocolate mixture into 12 silicone muffin cups.
- Set aside the remaining chocolate mixture.
- For the peanut butter filling, melt the coconut oil in a small pot.
- Add peanut butter, maple syrup, and vanilla, whisking until smooth.
- Pour a tablespoon of the peanut butter mixture into each muffin cup.
- Cover each with the remaining chocolate mixture.
- Freeze for 30 minutes, then remove from cups and store in an airtight container.
