Ingredients

Vegan Overnight Oats

  • cup regular oats
  • tbsp chia seeds
  • 1-1¼ cup non-dairy milk
  • tbsp carob powder or sweetened protein powder
  • 1 tsp cocoa powder
  • to taste maple syrup

Banana Soft Serve

  • 1 large frozen banana, chopped
  • 2-3 frozen strawberries

Toppings

  • to taste chopped strawberries
  • to taste blueberries
  • to taste homemade granola
  • to taste buckwheat groats
  • to taste shredded sweetened coconut

Instructions

  1. Combine the ingredients for the Vegan Overnight Oats in a bowl and place in the fridge overnight.
  2. In the morning, stir the oats and add maple syrup to taste.
  3. Process the frozen banana in a food processor to create banana soft serve.
  4. Remove half of the banana soft serve and place it in a bowl.
  5. Add frozen strawberries to the food processor and process to create strawberry soft serve.
  6. Layer the overnight oats, banana soft serve, and desired toppings in a glass, jar, or bowl.
