Instructions
- Prepare the chia seed jam by combining blueberries and maple syrup in a pot, adding salt, and simmering until softened.
- Stir in chia seeds and continue simmering until the mixture thickens, then remove from heat and add lemon juice.
- Cool the jam in the fridge or freezer.
- For the overnight oats, mix coconut milk, oats, chia seeds, maple syrup, cardamom, and cinnamon in a container.
- Cover and chill for 1-2 hours or overnight until thickened.
- Layer the chia jam, overnight oats, and diced pear in jars.
- Store leftovers in the fridge for up to 3-4 days.
