Instructions
- Boil water and evaporated milk in a pot, then add grits and salt, stirring continuously for 20-25 minutes.
- Stir in butter and cheeses until smooth, then reduce heat to simmer.
- Heat olive oil in a cast iron pan over medium heat.
- Season the fish with black pepper and creole seasoning.
- Mix eggs and wine in a bowl, and place breading mix in another bowl.
- Dredge the fish in the egg mixture, then coat in the breading mix.
- Fry the fish in hot oil for 3 minutes on each side until golden brown.
- Serve the fried fish on a bed of cheesy grits.
