Cajun Fried Fish and Cheese Grits

Ingredients

The grits

  • 1 cup Yellow Stone Ground Grits
  • 3 ½ cups Water
  • ½ cup Evaporated Milk
  • ½ tsp Himalayan Salt
  • 2 tbsp Butter
  • ½ cup Shredded Mozzarella Cheese
  • 2 cups Shredded Sharp Cheddar
  • ¼ cup Grated Parmesan Cheese

The fish

  • 1 lb Orange Roughy Fish
  • 1 cup Louisiana Fish Fry New Orleans Style Seafood Breading Mix
  • 2 Large Organic Eggs
  • 2 tsp White Wine
  • 4 tsp Creole Seasoning
  • 2 tsp Black Pepper

Instructions

  1. Boil water and evaporated milk in a pot, then add grits and salt, stirring continuously for 20-25 minutes.
  2. Stir in butter and cheeses until smooth, then reduce heat to simmer.
  3. Heat olive oil in a cast iron pan over medium heat.
  4. Season the fish with black pepper and creole seasoning.
  5. Mix eggs and wine in a bowl, and place breading mix in another bowl.
  6. Dredge the fish in the egg mixture, then coat in the breading mix.
  7. Fry the fish in hot oil for 3 minutes on each side until golden brown.
  8. Serve the fried fish on a bed of cheesy grits.
