Ingredients

Waffles

  • 1 cup Old Fashioned Oats
  • 1 cup Egg Whites
  • 1 cup buttermilk
  • ½ tsp Baking Powder
  • ½ tsp Cinnamon

Mango Pineapple Sauce

  • ¾ cup fresh pineapple, diced
  • ¾ cup fresh mango, diced
  • 2 tbsp agave nectar
  • 2 tbsp chia seeds
  • ½ cup water
  • 2 tsp lemon juice

Instructions

  1. Prepare the Mango Pineapple sauce by cooking diced mango, pineapple, water, lemon juice, chia seeds, and agave nectar in a saucepan over low heat until thickened.
  2. Set the sauce aside to cool for about 5 minutes and then puree it in a food processor.
  3. Preheat your waffle maker and process the oats into a fine powder.
  4. Mix the baking powder, cinnamon, and salt with the processed oats.
  5. Whisk the egg whites in a separate bowl until soft peaks form.
  6. Combine the buttermilk with the dry ingredients and then gently fold in the egg whites.
  7. Cook the waffles according to your waffle maker's instructions, using about ¼ to ⅓ cup of batter for each waffle.
  8. Once cooked, transfer the waffles to a serving plate and garnish with mango slices and fresh coconut shavings.
  9. Serve the waffles with the prepared Mango Pineapple sauce.
