Instructions
- Prepare the Mango Pineapple sauce by cooking diced mango, pineapple, water, lemon juice, chia seeds, and agave nectar in a saucepan over low heat until thickened.
- Set the sauce aside to cool for about 5 minutes and then puree it in a food processor.
- Preheat your waffle maker and process the oats into a fine powder.
- Mix the baking powder, cinnamon, and salt with the processed oats.
- Whisk the egg whites in a separate bowl until soft peaks form.
- Combine the buttermilk with the dry ingredients and then gently fold in the egg whites.
- Cook the waffles according to your waffle maker's instructions, using about ¼ to ⅓ cup of batter for each waffle.
- Once cooked, transfer the waffles to a serving plate and garnish with mango slices and fresh coconut shavings.
- Serve the waffles with the prepared Mango Pineapple sauce.
