Ingredients

Overnight Sponge

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 2 cups buttermilk
  • 1 cup sourdough starter

Morning Waffles

  • 2 large eggs
  • ¼ – ½ cup melted butter
  • ¾ teaspoon salt
  • 1 teaspoon baking soda
  • ½ teaspoon vanilla extract

Glazed Peaches

  • 2–3 large peaches
  • 1–2 tablespoons coconut oil or butter
  • 4 tablespoons real maple syrup

Instructions

  1. Prepare the overnight sponge by mixing flour, sugar, buttermilk, and sourdough starter in a bowl. Cover and refrigerate overnight.
  2. The next morning, bring the mixture to room temperature and whisk in eggs, melted butter, salt, baking soda, and vanilla.
  3. Preheat the waffle iron and grease it, then pour the batter into the waffle iron and cook according to the manufacturer's instructions.
  4. For the glazed peaches, heat butter in a skillet, add sliced peaches, and caramelize them. Drizzle maple syrup over the peaches.
  5. Serve the waffles immediately, topped with caramelized peaches and additional maple syrup if desired.
