Instructions
- Prepare the overnight sponge by mixing flour, sugar, buttermilk, and sourdough starter in a bowl. Cover and refrigerate overnight.
- The next morning, bring the mixture to room temperature and whisk in eggs, melted butter, salt, baking soda, and vanilla.
- Preheat the waffle iron and grease it, then pour the batter into the waffle iron and cook according to the manufacturer's instructions.
- For the glazed peaches, heat butter in a skillet, add sliced peaches, and caramelize them. Drizzle maple syrup over the peaches.
- Serve the waffles immediately, topped with caramelized peaches and additional maple syrup if desired.
