Ingredients

The sprouts

  • 16 ounces brussels sprouts

The seasoning

  • 2 tablespoons olive oil
  • 4 tablespoons shredded parmesan cheese
  • 4 cloves garlic, minced
  • 1 tablespoon lemon juice
  • to taste salt

Instructions

  1. Preheat the oven to 400°F.
  2. Line a baking sheet with parchment paper.
  3. Add brussels sprouts to a food processor and pulse until shredded.
  4. Transfer the shredded sprouts to a large bowl and mix with olive oil, 2 tablespoons of parmesan cheese, and minced garlic.
  5. Toss the mixture until well combined.
  6. Spread the seasoned sprouts on the prepared baking sheet and bake for 20-22 minutes, tossing halfway through.
  7. Once browned, remove from the oven and transfer to a bowl.
  8. Add the remaining parmesan cheese, lemon juice, and salt to taste, then toss to combine.
