Garlic Parmesan Roasted Brussels Sprouts

Instructions
- Preheat the oven to 400°F.
- Line a baking sheet with parchment paper.
- Add brussels sprouts to a food processor and pulse until shredded.
- Transfer the shredded sprouts to a large bowl and mix with olive oil, 2 tablespoons of parmesan cheese, and minced garlic.
- Toss the mixture until well combined.
- Spread the seasoned sprouts on the prepared baking sheet and bake for 20-22 minutes, tossing halfway through.
- Once browned, remove from the oven and transfer to a bowl.
- Add the remaining parmesan cheese, lemon juice, and salt to taste, then toss to combine.
