Ingredients

The vegetables

  • pounds Brussels sprouts, trimmed and halved
  • 4 cloves garlic, very roughly chopped

The seasoning

  • tablespoons extra-virgin olive oil
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 2 tablespoons freshly grated Parmesan

Instructions

  1. Preheat the oven to 400°F and place a rack in the upper third.
  2. Place the Brussels sprouts and garlic on a large rimmed baking sheet.
  3. Drizzle with olive oil and sprinkle with salt, pepper, and any other desired spices.
  4. Mix gently to coat the Brussels sprouts evenly, then spread them in a single layer.
  5. Bake for 10 minutes, then stir in the Parmesan cheese.
  6. Continue baking for an additional 10 to 20 minutes until the Brussels sprouts are charred and tender.
  7. Season with additional salt and pepper to taste before serving.
