Strawberry Oatmeal Breakfast Bowls

Ingredients

The oatmeal

  • 2 cups rolled oats
  • 2 tablespoons chia seeds
  • 2 tablespoons unsweetened shredded coconut
  • 2 tablespoons maple syrup
  • 1 14-ounce can lite coconut milk
  • 1 cup unsweetened almond milk
  • 1 teaspoon vanilla extract

The bowls

  • Fresh ripe strawberries quarter
  • slivered almonds
  • pepitas (pumpkin seeds)
  • additional almond milk or coconut milk

Instructions

  1. For the cold version, combine all oatmeal ingredients in a large container, stir, seal, and refrigerate overnight.
  2. Divide the oats into four bowls and top with strawberries, pepitas, and almonds. Add more almond or coconut milk if desired.
  3. For the hot version, combine oats, chia seeds, coconut, maple syrup, coconut milk, and almond milk in a pot.
  4. Bring to a boil, then reduce heat and simmer for 15-20 minutes until thickened.
  5. Remove from heat, stir in vanilla extract, and divide into bowls. Top with strawberries, almonds, and nuts, adding more milk if desired.
