Grilled Corn and Feta Egg in a Hole Avocado Toast

Ingredients

The toast

  • 2 slices crusty whole grain bread
  • 2 tablespoons olive oil or butter
  • 2 eggs eggs
  • to taste flaky sea salt and pepper

The toppings

  • 1 each avocado, lightly mashed
  • ½ each lemon, juice of
  • 1 each nectarine, thinly sliced
  • 1 ear charred or grilled corn, kernels removed
  • cup crumbled feta cheese
  • to taste crushed red pepper flakes
  • to taste fresh torn basil

Instructions

  1. Cut a round circle out of the center of each piece of bread using a cookie cutter.
  2. Heat olive oil in a skillet over medium heat, then add the bread and the centers, cooking until golden.
  3. Flip the toast and crack an egg into the center hole of each piece of bread, seasoning with salt and pepper.
  4. Cook until the egg is done to your liking, then remove from the skillet.
  5. Mash the avocado with lemon juice and season with salt.
  6. Spread the avocado on each piece of toast and top with nectarines, corn, feta, and basil.
  7. Drizzle with olive oil, sprinkle with salt, and enjoy.
