Instructions
- Prepare the chocolate lava by combining cocoa powder, honey, coconut milk, and salt in a saucepan and heating until melted.
- Simmer the mixture for 5 minutes, then remove from heat and stir in dark chocolate and vanilla until smooth.
- For the shake, scoop coconut cream from the top of the refrigerated coconut milk and reserve the water.
- Blend the coconut cream, almond milk (or reserved coconut water), matcha, vanilla, dates, avocado, banana, spinach, almond butter, and salt until smooth.
- Adjust the consistency with more almond milk if needed.
- To serve, drizzle warm chocolate into glasses, pour in the matcha shake, and top with cocoa nibs if desired.
