Vanilla Almond Matcha and Chocolate Lava Shake

Ingredients

Chocolate Lava

  • 2 tablespoons unsweetened cocoa
  • 2 tablespoons honey
  • cup canned coconut milk
  • ¼ teaspoon salt
  • 1 ½ ounces dark chocolate
  • 1 teaspoon vanilla extract

Shake

  • 1 can full-fat coconut milk
  • ½-¾ cup cold almond milk or coconut water
  • 1-2 tablespoons matcha green tea powder
  • 1 tablespoon pure vanilla extract
  • 2 soft medjool dates
  • ½ small ripe avocado
  • 1 very ripe banana
  • 1 small handful baby spinach
  • 2 tablespoons almond butter
  • 1 pinch salt
  • to taste cocoa nibs for topping

Instructions

  1. Prepare the chocolate lava by combining cocoa powder, honey, coconut milk, and salt in a saucepan and heating until melted.
  2. Simmer the mixture for 5 minutes, then remove from heat and stir in dark chocolate and vanilla until smooth.
  3. For the shake, scoop coconut cream from the top of the refrigerated coconut milk and reserve the water.
  4. Blend the coconut cream, almond milk (or reserved coconut water), matcha, vanilla, dates, avocado, banana, spinach, almond butter, and salt until smooth.
  5. Adjust the consistency with more almond milk if needed.
  6. To serve, drizzle warm chocolate into glasses, pour in the matcha shake, and top with cocoa nibs if desired.
