Banana Oatmeal

Ingredients

  • 1 cup milk
  • ½ cup water
  • 1 cup Old Fashioned oats
  • ½ cup low-fat buttermilk
  • 1 overripe mashed banana
  • 1-3 Tbsp packed light-brown sugar
  • ¼ tsp cinnamon
  • tsp salt
  • ¼ tsp vanilla
  • 1 Tbsp butter or 2 Tbsp cream (optional)
  • 2 Tbsp chopped pecans (optional)

Instructions

  1. 1. Bring water and milk to a boil in a medium saucepan.
  2. 2. Reduce heat to medium low and stir in oats, buttermilk, mashed banana, brown sugar, cinnamon, and salt.
  3. 3. Cook for an additional 5 minutes, stirring occasionally.
  4. 4. Remove from heat and stir in vanilla and optional butter or cream.
  5. 5. Cover and let rest for 3 minutes.
  6. 6. Serve warm topped with optional chopped pecans.
  7. 7. For microwave method, combine all ingredients in a large microwave-safe bowl and microwave on high for 3 ½ minutes, then let rest for 2 minutes before serving.
