Instant Pot Meatloaf

Ingredients

Potatoes

  • 1 large russet potato or 2 small, peeled
  • 2 cups water
  • 1 tsp salt
  • ¼ cup milk of choice
  • 1 tbsp butter

Meatloaf

  • 1 lb ground beef
  • 1 large egg
  • ¼ cup white onion, finely chopped
  • 2 stalks celery, finely chopped
  • 2 tbsp Worcestershire sauce
  • ¼ cup panko (optional)
  • 2 cloves garlic, minced
  • ½ cup BBQ sauce, separated
  • ¼ cup ketchup
  • to taste fresh parsley

Instructions

  1. Cut potatoes into cubes and place them in the Instant Pot with salt and water, then place the trivet over the potatoes.
  2. In a large bowl, combine ground beef, egg, onion, celery, Worcestershire sauce, panko, garlic, and ¼ cup of BBQ sauce.
  3. Form the meat mixture into a loaf on non-stick foil.
  4. Carefully lower the foil and meatloaf onto the trivet in the Instant Pot and secure the lid.
  5. Set the timer for 20 minutes on high pressure.
  6. After cooking, perform a quick release and remove the meatloaf.
  7. In a small bowl, mix the remaining BBQ sauce with ketchup and baste the top of the meatloaf, then broil for 1-2 minutes.
  8. Drain the water from the Instant Pot, remove the potatoes, and mash them with milk, butter, and additional salt before serving with the meatloaf.
