Instant Pot Meatloaf

BBQ sauce, separated

Instructions
- Cut potatoes into cubes and place them in the Instant Pot with salt and water, then place the trivet over the potatoes.
- In a large bowl, combine ground beef, egg, onion, celery, Worcestershire sauce, panko, garlic, and ¼ cup of BBQ sauce.
- Form the meat mixture into a loaf on non-stick foil.
- Carefully lower the foil and meatloaf onto the trivet in the Instant Pot and secure the lid.
- Set the timer for 20 minutes on high pressure.
- After cooking, perform a quick release and remove the meatloaf.
- In a small bowl, mix the remaining BBQ sauce with ketchup and baste the top of the meatloaf, then broil for 1-2 minutes.
- Drain the water from the Instant Pot, remove the potatoes, and mash them with milk, butter, and additional salt before serving with the meatloaf.
