Greek Fried Bread Stuffed with Cheese

Ingredients

Dough

  • 1 ¼ cup all-purpose flour
  • ½ tsp salt
  • ½ tsp sugar
  • 1 ½ tsp active dry yeast
  • ½ cup lukewarm water
  • ¼ cup olive oil

Filling

  • ¾ cup crumbled feta cheese
  • ½ cup shredded mizithra cheese (or parmesan cheese)
  • 1 tsp dried oregano
  • 4 large fresh mint leaves, minced
  • 1 tbsp fresh minced parsley

For Serving

  • to taste none olive oil for frying
  • to taste none lemon wedges
  • to taste none dried oregano

Instructions

  1. Make a well in the flour and add salt, sugar, yeast, and olive oil.
  2. Stir the ingredients in the well and gradually add lukewarm water to form a sticky dough.
  3. Knead the dough on a floured surface until smooth and elastic, then shape it into a circle.
  4. Cover the dough with plastic wrap and let it rest for 30 minutes.
  5. Prepare the filling by mixing crumbled feta, shredded mizithra cheese, minced mint, minced parsley, and dried oregano.
  6. After resting, divide the dough into 4 pieces and roll each into thin circles.
  7. Place the filling on two circles, cover with the other circles, and seal the edges with a fork.
  8. Heat olive oil in a frying pan and fry each bread until browned on both sides.
  9. Let the fried bread rest on paper towels to absorb excess oil.
  10. Serve with lemon juice and a sprinkle of dried oregano.
