Fried Feta Stuffed Olives

Ingredients

The olives

  • 225-250 g pitted green olives
  • ½ cup feta cheese pieces

The batter

  • 3 tbsp all purpose flour
  • ½ cup all purpose flour
  • ¼ cup corn starch
  • 1 tsp baking powder
  • 1 tsp salt
  • ½ tsp pepper
  • 2 tsp dried oregano
  • ½ cup sparkling water

For frying and garnish

  • Neutral oil for frying (avocado or grapeseed oil)
  • Fresh oregano for garnish

Instructions

  1. Slice feta cheese into 1-inch pieces and stuff each olive with a piece.
  2. Toss the stuffed olives in 3 tbsp of flour and set aside.
  3. Prepare the batter by whisking together flour, cornstarch, baking powder, salt, pepper, and oregano, then add sparkling water until the consistency is like pancake batter.
  4. Heat oil in a medium pot to about 1½ - 2 inches deep over medium heat.
  5. Coat olives in batter and carefully drop them into the hot oil.
  6. Fry for about 5 minutes, turning halfway through until golden brown.
  7. Garnish with fresh oregano and serve immediately.
