Gin Marinated Olives
Ingredients
The olives

drained, rinsed green olives (preferably Castelvetrano)

serrano peppers, halved

garlic, thinly sliced

slivered peel of one lemon
The marinade

extra virgin olive oil

gin

teaspoon
dried oregano

sprigs
dried thyme

cubed feta cheese
Instructions
- 1. Preheat the oven to 350°F (180°C) with a rack in the center.
- 2. In a baking dish, combine the olives, peppers, garlic, lemon peel, olive oil, gin, oregano, and thyme, and toss well.
- 3. Bake for about 30 minutes, stirring once or twice during cooking.
- 4. Remove from the oven, sprinkle with feta, and let cool slightly before serving.
