Gin Marinated Olives

Ingredients

The olives

  • 12 ounces drained, rinsed green olives (preferably Castelvetrano)
  • 2 pieces serrano peppers, halved
  • 1 medium clove garlic, thinly sliced
  • 1 piece slivered peel of one lemon

The marinade

  • 6 tablespoons extra virgin olive oil
  • ½ cup gin
  • ½ teaspoon dried oregano
  • a few sprigs dried thyme
  • ¼ cup cubed feta cheese

Instructions

  1. 1. Preheat the oven to 350°F (180°C) with a rack in the center.
  2. 2. In a baking dish, combine the olives, peppers, garlic, lemon peel, olive oil, gin, oregano, and thyme, and toss well.
  3. 3. Bake for about 30 minutes, stirring once or twice during cooking.
  4. 4. Remove from the oven, sprinkle with feta, and let cool slightly before serving.
