Ingredients

The olives

  • 2 cups Green Olives, pitted
  • 1 ¼ cups Black Olives, pitted

The flavorings

  • 4 cloves Garlic, mashed
  • ½ orange Orange zest
  • 1 lemon Lemon zest and juice
  • 2 teaspoons Fresh Thyme, chopped
  • 2 teaspoons Fennel Seeds
  • 1 teaspoon Aleppo Pepper
  • ½ teaspoon Ground Black Pepper

The oil

  • cup High-Quality Olive Oil

Instructions

  1. Rinse the olives thoroughly in a mesh strainer to remove liquid.
  2. Combine the olives, mashed garlic, orange zest, lemon juice and zest, fresh thyme, fennel seeds, Aleppo pepper, ground black pepper, and olive oil in a large bowl.
  3. Toss the ingredients to fully coat the olives.
  4. Heat a small saucepan over medium-low heat and add the olive mixture.
  5. Cook until the oil begins to sizzle, about 4-5 minutes, then reduce heat to low and cook for an additional 3-4 minutes.
  6. Remove from heat, let cool, transfer to a bowl, and serve.
