Instructions

  1. Warm fennel seeds in a small saucepan over medium-low heat until fragrant.
  2. Add olive oil, vinegar, rosemary (or thyme), garlic, and red pepper flakes to the pan and heat until fragrant.
  3. Pour the mixture over the olives and stir to combine.
  4. Add parsley and salt, stirring again.
  5. Let marinate for at least 2 hours for better flavor, though they can be served immediately.
  6. Alternatively, crush fennel seeds, mix with garlic to form a paste, and combine with the other ingredients before tossing with olives.
