The marinade

Instructions
- Drain and rinse the olives, then set aside to drain.
- In a medium skillet, heat the olive oil with the smashed garlic, half of the fresh herbs, lemon zest, red chile flakes, and black peppercorns for 3-4 minutes until fragrant.
- Remove from heat and season with kosher salt.
- In a quart jar, layer the olives with the garlic and reserved herbs.
- Pour the flavored oil over the olives, cover, and refrigerate for at least 30 minutes.
- For best flavor, let the olives marinate for up to 3 days before serving.
