Marinated Olives

Ingredients

The olives

  • 1 jar Castelvetrano olives
  • 1 jar kalamata olives

The marinade

  • 1 cup extra virgin olive oil
  • 5 cloves garlic, peeled and smashed
  • 4 sprigs fresh rosemary
  • 4 sprigs fresh thyme
  • 6-8 pieces black peppercorns
  • ½ teaspoon red chile flakes
  • ¼ teaspoon kosher salt
  • 1 zest lemon

Instructions

  1. Drain and rinse the olives, then set aside to drain.
  2. In a medium skillet, heat the olive oil with the smashed garlic, half of the fresh herbs, lemon zest, red chile flakes, and black peppercorns for 3-4 minutes until fragrant.
  3. Remove from heat and season with kosher salt.
  4. In a quart jar, layer the olives with the garlic and reserved herbs.
  5. Pour the flavored oil over the olives, cover, and refrigerate for at least 30 minutes.
  6. For best flavor, let the olives marinate for up to 3 days before serving.
