Herb-Stuffed Flatbreads With Yogurt Sauce

The yogurt sauce

The herb filling

finely chopped mixed tender herbs (such as parsley, cilantro, dill, mint, basil, and/or chives)

Instructions
- Mix the whole wheat flour, all-purpose flour, salt, and water until a shaggy dough forms, then knead until smooth and let rest for 30 minutes.
- Combine yogurt, mayonnaise, salt, and lemon juice in a bowl and chill.
- Mix scallions, herbs, paprika, salt, and olive oil in a bowl, then add lemon juice and toss.
- Divide dough into 8 pieces, roll each into an oval, add herb filling, fold and seal.
- Heat vegetable oil in a skillet to 325°F and fry the flatbreads until golden brown, about 3 minutes per side.
- Cut the flatbreads and serve with the yogurt sauce sprinkled with paprika.
