Herb-Stuffed Flatbreads With Yogurt Sauce

Ingredients

The flatbreads

  • ½ cup whole wheat flour or spelt flour
  • cups all-purpose flour
  • tsp Diamond Crystal kosher salt
  • 2 Tbsp extra-virgin olive oil
  • ¾ cup water
  • about 4 cups vegetable oil (for frying)

The yogurt sauce

  • ½ cup plain whole-milk yogurt
  • 2 Tbsp mayonnaise
  • 1 lemon halved
  • 3 scallions finely chopped

The herb filling

  • 3 cups finely chopped mixed tender herbs (such as parsley, cilantro, dill, mint, basil, and/or chives)
  • ½ tsp paprika
  • 1 tsp Diamond Crystal kosher salt

Instructions

  1. Mix the whole wheat flour, all-purpose flour, salt, and water until a shaggy dough forms, then knead until smooth and let rest for 30 minutes.
  2. Combine yogurt, mayonnaise, salt, and lemon juice in a bowl and chill.
  3. Mix scallions, herbs, paprika, salt, and olive oil in a bowl, then add lemon juice and toss.
  4. Divide dough into 8 pieces, roll each into an oval, add herb filling, fold and seal.
  5. Heat vegetable oil in a skillet to 325°F and fry the flatbreads until golden brown, about 3 minutes per side.
  6. Cut the flatbreads and serve with the yogurt sauce sprinkled with paprika.
