Chicken Bacon Ranch Casserole

Ingredients

  • 1 tablespoon oil
  • 1 medium onion, diced
  • 5 ounces fresh spinach, chopped
  • 2 cups cooked diced chicken breast or thighs
  • 16 ounces penne pasta, cooked
  • 8 ounces bacon, cooked and chopped
  • 8 ounces cream cheese, at room temperature
  • ¾ cup ranch dressing
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon cayenne pepper
  • 8 ounces shredded cheddar cheese, divided

Instructions

  1. Preheat the oven to 350°F and spray a 13 x 9 baking dish with cooking spray.
  2. Heat the oil in a skillet over medium heat and add the diced onion, cooking for 7 minutes until soft.
  3. Add the chopped spinach and cook for an additional 3 minutes until wilted, then remove from heat and transfer to a large bowl.
  4. In the bowl, combine the cooked chicken, cooked pasta, and chopped bacon with the sautéed vegetables.
  5. In a food processor, blend the cream cheese, ranch dressing, salt, pepper, and cayenne until smooth.
  6. Toss the ranch mixture with the chicken and pasta mixture, then stir in half of the shredded cheese.
  7. Transfer the mixture to the prepared baking dish and top with the remaining cheese.
  8. Bake for 30 minutes until the cheese is melted and bubbly, then allow to cool slightly before serving.
