Paleo Peppermint Frosting

Ingredients

  • 3 large egg yolks
  • 1 cup palm shortening
  • ½ cup honey
  • ¾ teaspoon peppermint extract
  • teaspoon red food coloring (optional)

Instructions

  1. Combine egg yolks and palm shortening in a food processor.
  2. Process for 3 minutes until fluffy.
  3. Pulse in honey until well combined.
  4. Add peppermint extract and food coloring, pulse to mix.
  5. Refrigerate for 2 hours to set.
  6. Spread over cupcakes or cookies.
