Instructions
- Sauté onion, garlic, and diced green chilies in a large pot.
- Add salt, pepper, coriander, and cumin until fragrant.
- Add chicken breasts and 3 cups of chicken stock; bring to a low boil.
- Reduce heat and simmer for 15 minutes.
- Remove chicken, shred it, and return it to the pot with white beans and quinoa.
- Simmer on low for 30 minutes, adding more stock if needed.
- Stir in lime juice and serve with garnishes.
