Ingredients

The chili

  • 2 large Boneless Skinless Chicken Breasts
  • 15 ounces White Beans (Cannelini or Navy Beans)
  • 4 ounces Canned Diced Green Chilies
  • ½ cup onion (diced)
  • 1 tbsp garlic (minced)
  • tbsp Ground Cumin
  • ½ tbsp Ground Coriander
  • 4 cups Chicken Stock
  • ½ cup Quinoa
  • Juice of 1 Lime
  • to taste salt
  • to taste pepper

Garnishes

  • 1 Jalapeno (thinly sliced)
  • Light Sour Cream for garnish
  • ¼ cup Cilantro (minced)

Instructions

  1. Sauté onion, garlic, and diced green chilies in a large pot.
  2. Add salt, pepper, coriander, and cumin until fragrant.
  3. Add chicken breasts and 3 cups of chicken stock; bring to a low boil.
  4. Reduce heat and simmer for 15 minutes.
  5. Remove chicken, shred it, and return it to the pot with white beans and quinoa.
  6. Simmer on low for 30 minutes, adding more stock if needed.
  7. Stir in lime juice and serve with garnishes.
