Ingredients

Batter

  • 1 cup butter, softened
  • 2 cups white sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup sour cream

Filling

  • 1 small baking apple, peeled, cored, and finely chopped (about 1 ¼ cups)
  • tablespoons all-purpose flour
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • teaspoon ground cloves
  • ¼ teaspoon ground ginger
  • teaspoon ground nutmeg

Glaze

  • 1 cup powdered sugar
  • 1 teaspoon almond or vanilla extract
  • 1-2 tablespoons milk

Instructions

  1. Preheat the oven to 350°F and grease and flour a 10" bundt cake pan.
  2. In a large bowl, cream the butter and sugar until light and fluffy, then add the eggs one at a time and mix in the vanilla.
  3. In another bowl, combine the flour, baking powder, baking soda, and salt.
  4. Gradually mix the flour mixture into the butter mixture in stages, alternating with the sour cream, until well combined.
  5. In a small bowl, toss the chopped apples with flour, brown sugar, and spices to coat.
  6. Pour enough batter into the bundt pan to cover the bottom, then layer half of the apples on top.
  7. Spread more batter over the apples, followed by the remaining apples, and top with the last of the batter.
  8. Bake for 45-55 minutes or until a toothpick comes out clean. Allow to cool completely.
  9. Invert the cake onto a serving plate and drizzle with the glaze if desired.
