Instructions
- Preheat the oven to 350°F and grease and flour a 10" bundt cake pan.
- In a large bowl, cream the butter and sugar until light and fluffy, then add the eggs one at a time and mix in the vanilla.
- In another bowl, combine the flour, baking powder, baking soda, and salt.
- Gradually mix the flour mixture into the butter mixture in stages, alternating with the sour cream, until well combined.
- In a small bowl, toss the chopped apples with flour, brown sugar, and spices to coat.
- Pour enough batter into the bundt pan to cover the bottom, then layer half of the apples on top.
- Spread more batter over the apples, followed by the remaining apples, and top with the last of the batter.
- Bake for 45-55 minutes or until a toothpick comes out clean. Allow to cool completely.
- Invert the cake onto a serving plate and drizzle with the glaze if desired.
