Ingredients

The casserole

  • 3 pounds sweet potatoes, peeled and diced
  • 1 5-ounce can evaporated milk
  • ¾ cup chicken broth
  • 2 tablespoons butter
  • 1 teaspoon sea salt
  • 1 teaspoon cinnamon
  • 3 large eggs, beaten
  • ½ cup brown sugar

The topping

  • 1 ½ cups mini marshmallows

Instructions

  1. 1. Place the cubed sweet potatoes in the slow cooker.
  2. 2. Add the evaporated milk, chicken broth, butter, salt, and cinnamon.
  3. 3. Cover and cook on high for 3 hours or low for 6 hours until the potatoes are soft.
  4. 4. Mash the sweet potatoes using a potato masher.
  5. 5. Stir in the eggs and brown sugar.
  6. 6. Flatten the mixture down and top with marshmallows.
  7. 7. Cover and cook for an additional hour on low.
