Ingredients

The salad

  • 2 whole ripe avocados
  • 1 cup shredded chicken
  • 4 whole hard boiled eggs, chopped
  • ¼ cup oil packed sun-dried tomatoes, chopped
  • ½ cup fresh herbs, roughly chopped (basil + dill)
  • ½ cup crumbled feta cheese
  • juice from 1 lemon lemon juice
  • to taste none kosher salt and pepper

The bread

  • 6-8 pieces toasted whole grain bread

The garnish

  • to taste none fresh arugula or microgreens

Instructions

  1. Mash the avocados in a medium bowl.
  2. Add the chicken, chopped eggs, sun-dried tomatoes with some oil, feta, herbs, lemon juice, salt, and pepper to the bowl and mix well.
  3. Taste and adjust the seasonings as needed.
  4. Spoon the salad onto toasted bread, add arugula, and top with another slice of bread.
  5. Serve and enjoy!
