Instructions
- Mash the avocados in a medium bowl.
- Add the chicken, chopped eggs, sun-dried tomatoes with some oil, feta, herbs, lemon juice, salt, and pepper to the bowl and mix well.
- Taste and adjust the seasonings as needed.
- Spoon the salad onto toasted bread, add arugula, and top with another slice of bread.
- Serve and enjoy!
