Loaded Avocado Chicken Salad

Ingredients

  • 2 whole avocados
  • ½ cup greek yogurt
  • 2 Tbsp mayonnaise
  • ¼ cup finely chopped celery
  • 2 Tbsp chopped green onion
  • 1 Tbsp finely chopped fresh parsley
  • cups shredded rotisserie chicken
  • ½ tsp garlic powder
  • ½ tsp hot sauce
  • ¼ cup sliced almonds
  • 1 Tbsp finely chopped fresh basil
  • ½ tsp salt
  • ½ tsp freshly cracked black pepper

Instructions

  1. Slice the avocados in half and remove the pits.
  2. Mash the insides of the avocados in a large mixing bowl until smooth.
  3. Add greek yogurt and mayonnaise to the bowl and mix well.
  4. Incorporate celery, green onion, parsley, basil, garlic powder, hot sauce, and almonds into the mixture.
  5. Add the shredded rotisserie chicken and mix in, then season with salt and pepper to taste.
  6. Serve ½ cup of the salad on your choice of bread.
