Instructions
- Preheat the oven to 350°F.
- Line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and salt.
- In a stand mixer, beat the butter, brown sugar, and granulated sugar for 2 minutes on medium speed.
- Add the egg, egg yolk, and vanilla, and beat for another minute, scraping down the bowl as needed.
- Reduce the speed to low and add the flour mixture, mixing until just combined.
- Add the chocolate chips and raspberries, mixing until combined without over-mixing.
- Use a cookie scoop to drop the dough onto the prepared baking sheet.
- Bake for 11 to 15 minutes until lightly golden brown and set.
- Let the cookies cool on the baking sheet for 10 minutes before transferring to a wire rack to cool completely.
