Ingredients

  • 2 cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup unsalted butter
  • 1 cup packed light brown sugar
  • ½ cup granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 2 teaspoons vanilla extract
  • 11 ounces white chocolate chips
  • ½ cup raspberries, chopped

Instructions

  1. Preheat the oven to 350°F.
  2. Line a baking sheet with parchment paper.
  3. In a medium bowl, whisk together the flour, baking soda, and salt.
  4. In a stand mixer, beat the butter, brown sugar, and granulated sugar for 2 minutes on medium speed.
  5. Add the egg, egg yolk, and vanilla, and beat for another minute, scraping down the bowl as needed.
  6. Reduce the speed to low and add the flour mixture, mixing until just combined.
  7. Add the chocolate chips and raspberries, mixing until combined without over-mixing.
  8. Use a cookie scoop to drop the dough onto the prepared baking sheet.
  9. Bake for 11 to 15 minutes until lightly golden brown and set.
  10. Let the cookies cool on the baking sheet for 10 minutes before transferring to a wire rack to cool completely.
