Ingredients

The donuts

  • 2 ¼ cups all-purpose flour
  • 2 tsp baking powder
  • ¾ tsp salt
  • cup granulated sugar
  • ¼ cup unsalted butter
  • ¼ cup vegetable oil or canola oil
  • 2 large eggs
  • 1 tsp real coconut extract
  • ½ tsp vanilla extract
  • 1 cup canned light coconut milk
  • 1 Tbsp lemon juice

The glaze and topping

  • 1 ½ cups powdered sugar
  • 3 Tbsp milk
  • 1 ½ Tbsp salted butter
  • ½ tsp real coconut extract
  • ¾ cup finely shredded coconut

Instructions

  1. Preheat the oven to 400°F.
  2. Whisk together flour, baking powder, and salt in a mixing bowl and set aside.
  3. In a stand mixer, blend the butter and sugar, then mix in the vegetable oil.
  4. Add the eggs, coconut extract, and vanilla extract to the mixture.
  5. Gradually mix in the flour mixture, alternating with the coconut milk and lemon juice.
  6. Transfer the batter to a piping bag and fill the donut pans.
  7. Bake for 8-11 minutes until set and let cool for 3 minutes in the pan.
  8. Prepare the glaze by whisking together powdered sugar, milk, butter, and coconut extract.
  9. Dip the cooled donuts in the glaze and then in shredded coconut.
  10. Allow the glaze to set before storing the donuts in an airtight container.
