Instructions
- Preheat the oven to 400°F.
- Whisk together flour, baking powder, and salt in a mixing bowl and set aside.
- In a stand mixer, blend the butter and sugar, then mix in the vegetable oil.
- Add the eggs, coconut extract, and vanilla extract to the mixture.
- Gradually mix in the flour mixture, alternating with the coconut milk and lemon juice.
- Transfer the batter to a piping bag and fill the donut pans.
- Bake for 8-11 minutes until set and let cool for 3 minutes in the pan.
- Prepare the glaze by whisking together powdered sugar, milk, butter, and coconut extract.
- Dip the cooled donuts in the glaze and then in shredded coconut.
- Allow the glaze to set before storing the donuts in an airtight container.
