Instructions
- Preheat the oven to 350°F.
- In a bowl, whisk together the eggs, milk, vanilla extract, maple syrup, lemon juice, and lemon zest until combined.
- Grease an 8x8 or 9x11 baking dish and set aside.
- Add the rolled oats, poppy seeds, cinnamon, baking powder, and kosher salt to the baking dish.
- Pour the wet ingredients over the dry ingredients and mix until fully combined.
- Fold in the blueberries and optionally add more lemon zest on top.
- Bake in the preheated oven for 32-35 minutes or until the top is set.
- Allow to cool slightly before slicing into squares and serve.
