Instructions
- Preheat the oven to 375℉ and prepare a 9×9-inch baking dish with cooking spray.
- Combine flaxseed meal and water in a small bowl and let it thicken for at least 5 minutes.
- In a large bowl, mix together oats, chia seeds, baking powder, and salt.
- Make a well in the dry ingredients and add the flax meal mixture, maple syrup, lemon juice, lemon zest, applesauce, milk, and oil. Mix until combined.
- Gently fold in blueberries and optional white chocolate chips.
- Pour the mixture into the prepared baking dish and bake for 30-35 minutes until golden and a toothpick comes out clean.
- Allow to cool on a wire rack before serving warm or cold with desired toppings.
