Ingredients

The base

  • 2 tablespoons flaxseed meal
  • 5 tablespoons water
  • 2 ¾ cups old-fashioned rolled oats
  • 2 tablespoons chia seeds
  • 1 teaspoon baking powder
  • ¼ teaspoon fine salt

The sweeteners and flavorings

  • ¼ cup pure maple syrup
  • 2 tablespoons fresh lemon juice
  • 1 lemon zest of lemon
  • ¼ cup unsweetened applesauce

The liquids

  • 1 ½ cups non-dairy milk of choice
  • 3 tablespoons avocado oil

The mix-ins

  • 1 cup blueberries
  • ¼ cup white chocolate chips

Instructions

  1. Preheat the oven to 375℉ and prepare a 9×9-inch baking dish with cooking spray.
  2. Combine flaxseed meal and water in a small bowl and let it thicken for at least 5 minutes.
  3. In a large bowl, mix together oats, chia seeds, baking powder, and salt.
  4. Make a well in the dry ingredients and add the flax meal mixture, maple syrup, lemon juice, lemon zest, applesauce, milk, and oil. Mix until combined.
  5. Gently fold in blueberries and optional white chocolate chips.
  6. Pour the mixture into the prepared baking dish and bake for 30-35 minutes until golden and a toothpick comes out clean.
  7. Allow to cool on a wire rack before serving warm or cold with desired toppings.
