Instructions
- Make dulce de leche by cooking sweetened condensed milk in a saucepan over medium-low heat until caramel-like in color.
- Preheat the oven to 350°F and prepare a 9×13-inch baking pan with parchment paper.
- In a mixing bowl, combine melted butter, brown sugar, and granulated sugar, then mix in eggs and vanilla extract.
- Add flour, baking powder, baking soda, and salt to the mixture and combine until smooth.
- Spread the cookie dough evenly in the prepared baking pan.
- In the same bowl, combine cream cheese, sugar, egg, and salt, then mix until smooth.
- Pour the cheesecake filling over the cookie base and smooth it out.
- Drop dollops of dulce de leche onto the cheesecake layer and swirl with a knife.
- Bake for 25-30 minutes until the surface is slightly jiggly.
- Allow to cool for about an hour before slicing and topping with sea salt.
