Ingredients

Dulce de Leche

  • 1 14-ounce can sweetened condensed milk

Cookie Base

  • ¾ cup unsalted butter, melted
  • ½ cup firmly packed brown sugar
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon kosher salt

Cheesecake Topping

  • 8 ounces cream cheese, room temperature
  • ¼ cup white sugar
  • 1 large egg
  • a pinch salt
  • to taste sea salt, for topping

Instructions

  1. Make dulce de leche by cooking sweetened condensed milk in a saucepan over medium-low heat until caramel-like in color.
  2. Preheat the oven to 350°F and prepare a 9×13-inch baking pan with parchment paper.
  3. In a mixing bowl, combine melted butter, brown sugar, and granulated sugar, then mix in eggs and vanilla extract.
  4. Add flour, baking powder, baking soda, and salt to the mixture and combine until smooth.
  5. Spread the cookie dough evenly in the prepared baking pan.
  6. In the same bowl, combine cream cheese, sugar, egg, and salt, then mix until smooth.
  7. Pour the cheesecake filling over the cookie base and smooth it out.
  8. Drop dollops of dulce de leche onto the cheesecake layer and swirl with a knife.
  9. Bake for 25-30 minutes until the surface is slightly jiggly.
  10. Allow to cool for about an hour before slicing and topping with sea salt.
