Dulce de Leche Brownies

Instructions
- Preheat the oven to 325°F and prepare an 8-inch square or 8 x 10-inch baking pan with nonstick spray.
- Melt the chocolate in a microwave-safe bowl, stirring every 45 seconds until smooth, then let it cool.
- In an electric mixer, cream together the butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then slowly drizzle in the melted chocolate.
- Mix in the flour and vanilla extract until just combined, scraping the bowl as needed.
- Spread the batter into the prepared pan.
- Warm the dulce de leche in the microwave and drop dollops onto the brownie batter, swirling it in gently with a knife.
- Bake for 45-50 minutes until the center is almost set, then cool in the pan for 15 minutes before transferring to a wire rack to cool completely.
- Cut into squares and serve with ice cream and extra dulce de leche if desired.
