Ingredients

The pudding

  • ¼ cup chia seeds
  • 1 cup non-dairy milk
  • 1 tablespoon agave syrup or maple syrup
  • ¾ teaspoon pumpkin pie spice
  • ½ cup pumpkin puree
  • a pinch sea salt

For garnish

  • to taste chopped pecans

Instructions

  1. Mix all ingredients except the pecans in a bowl or individual jars until smooth.
  2. Taste and adjust the seasonings and sweetener as needed.
  3. Cover and refrigerate for at least 4 hours or overnight.
  4. Serve chilled, topped with pecans and an optional drizzle of non-dairy milk or creamer.
