Vegan Instant Pot Collard Greens

Instructions
- Remove the hard stems from the collard greens and cut the leaves into 2-3 inch strips.
- Rinse the collards in water until clean.
- For the Instant Pot, sauté the onion in oil until translucent, then add garlic and red pepper flakes.
- Add the collards and sauté until wilted, then combine the remaining ingredients in a bowl and pour into the pot.
- Lock the lid and set to high pressure for 25 minutes, then manually release the steam.
- For stovetop, heat oil in a pan, sauté onion, garlic, and red pepper flakes, then add collards and sauté until slightly wilted.
- Mix the remaining ingredients and pour over the collards, bringing to a simmer and covering to cook until tender.
