Vegan Instant Pot Collard Greens

Ingredients

The greens

  • 1 pound collard greens

The sauté base

  • 1 tablespoon olive oil
  • ½ large yellow onion, diced
  • 3-4 cloves garlic, minced

The cooking liquid

  • cups vegetable broth
  • 1 tablespoon reduced sodium soy sauce or tamari sauce
  • 2 teaspoons apple cider vinegar
  • 1 teaspoon brown sugar
  • ¼ teaspoon salt
  • 1-2 teaspoons red pepper flakes
  • ¼ teaspoon ground black pepper

Instructions

  1. Remove the hard stems from the collard greens and cut the leaves into 2-3 inch strips.
  2. Rinse the collards in water until clean.
  3. For the Instant Pot, sauté the onion in oil until translucent, then add garlic and red pepper flakes.
  4. Add the collards and sauté until wilted, then combine the remaining ingredients in a bowl and pour into the pot.
  5. Lock the lid and set to high pressure for 25 minutes, then manually release the steam.
  6. For stovetop, heat oil in a pan, sauté onion, garlic, and red pepper flakes, then add collards and sauté until slightly wilted.
  7. Mix the remaining ingredients and pour over the collards, bringing to a simmer and covering to cook until tender.
