Ingredients

The dry ingredients

  • 2 cups old fashioned oats
  • ½ cup chopped pecans
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • ¼ cup unsweetened coconut flakes

The wet ingredients

  • 4 tablespoons coconut oil, melted
  • ½ cup pure maple syrup
  • teaspoons vanilla extract

The mix-ins

  • ½ cup dried blueberries

Instructions

  1. Preheat the oven to 325ºF.
  2. In a large bowl, combine the dry ingredients and set aside.
  3. In a small bowl, whisk together the wet ingredients until combined.
  4. Pour the wet mixture over the dry mixture and toss to coat.
  5. Spread the granola mixture on a baking sheet lined with a silicon baking mat or wax paper.
  6. Bake for 30 minutes, stirring every 10 minutes to prevent burning.
  7. Remove from the oven and let cool, then mix in the dried blueberries.
