Cauliflower Bagels

Ingredients

The bagel dough

  • 3 cups packed cauliflower rice
  • 1/4 tsp garlic powder
  • 2 large eggs
  • 2 tbsp almond flour
  • 2 tbsp coconut flour
  • 1 tbsp poppy seeds
  • 1 tbsp sesame seeds
  • 1 tbsp minced garlic
  • 1 tbsp minced onion
  • 3/4 tsp kosher sea salt

The seasoning

  • pinch kosher sea salt

Instructions

  1. Preheat the oven to 400°F.
  2. Line a rimmed baking sheet with parchment paper.
  3. In a large bowl, mix together cauliflower rice, salt, garlic powder, eggs, almond flour, and coconut flour until well combined.
  4. Form about 1/4 cup of the dough into a ball, squeeze out excess liquid, flatten it slightly, and poke a hole in the center.
  5. Place the formed bagel on the baking sheet and repeat until all dough is used, making 8 bagels.
  6. Sprinkle the everything bagel spice mixture on top of each bagel and gently press the seeds into the dough.
  7. Bake in the oven for 30 minutes or until the bagels are golden brown and set.
  8. Allow to cool completely before slicing and adding toppings.
  9. Store in an airtight container in the fridge for up to 5 days.
