Instructions
- Preheat the oven to 200C/400F and line a baking tray with parchment paper.
- In a small bowl, combine almond flour and baking powder.
- In a microwave-safe bowl, melt mozzarella and cream cheese together in 30-second spurts until mostly melted, then whisk until smooth.
- Transfer the cheese mixture to a food processor, add two eggs and dry ingredients, and pulse until smooth.
- Lightly flour a surface with almond flour, then divide the dough into eight equal portions and shape into bagels.
- Place the bagels on the lined baking sheet, whisk the remaining egg, brush it over the tops, and sprinkle with sesame seeds.
- Bake for 12-15 minutes until golden brown, then let cool before slicing and serving.
