Ingredients

The dough

  • cup almond flour
  • 1 tablespoon baking powder
  • 3 cups shredded mozzarella cheese
  • 2 oz cream cheese
  • 3 large eggs

Toppings

  • 1 tablespoon sesame seeds

Instructions

  1. Preheat the oven to 200C/400F and line a baking tray with parchment paper.
  2. In a small bowl, combine almond flour and baking powder.
  3. In a microwave-safe bowl, melt mozzarella and cream cheese together in 30-second spurts until mostly melted, then whisk until smooth.
  4. Transfer the cheese mixture to a food processor, add two eggs and dry ingredients, and pulse until smooth.
  5. Lightly flour a surface with almond flour, then divide the dough into eight equal portions and shape into bagels.
  6. Place the bagels on the lined baking sheet, whisk the remaining egg, brush it over the tops, and sprinkle with sesame seeds.
  7. Bake for 12-15 minutes until golden brown, then let cool before slicing and serving.
