Instructions
- Melt the mozzarella and cream cheese in a microwave-safe bowl for 1 minute, stir, then microwave for an additional 30 seconds to 1 minute until fully melted.
- Add the egg to the melted cheese and mix until smooth.
- Incorporate the dry ingredients (almond flour, baking powder, and oat fiber) into the cheese mixture and blend until a dough forms.
- Transfer the dough onto cling film and freeze until the oven is preheated to 400°F.
- Divide the dough into 6 equal pieces, oil your hands, and roll each piece into a snake, then form a ring by pinching the ends together.
- Place the formed bagels on a parchment-lined baking sheet, optionally sprinkle with toppings.
- Bake for 12 minutes or until golden brown, then let cool before removing from the sheet.
