Instructions
- Melt the mozzarella and cream cheese in a microwave-safe bowl for 1 minute, then stir and heat for another 30 seconds to 1 minute until fully melted.
- Add the egg to the melted cheese mixture and stir until combined.
- In a separate bowl, mix the dry ingredients: almond flour, baking powder, and oat fiber.
- Combine the dry ingredients with the cheese and egg mixture, mixing until a dough forms.
- If the dough is too sticky, refrigerate it for a short time to make it easier to handle.
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Divide the dough into 6 equal pieces, roll each piece into a snake shape, and form into a ring by pinching the ends together.
- Place the bagels on the prepared baking sheet, optionally topping with your favorite seasoning.
- Bake for about 12 minutes or until the bagels are golden brown.
- Allow to cool slightly before removing from the baking sheet.
