Ingredients

  • cup part-skim shredded mozzarella cheese
  • 2 ounces full-fat cream cheese
  • 1 large egg
  • cup almond flour
  • 1 tablespoon baking powder
  • 1 tablespoon oat fiber

Instructions

  1. Melt the mozzarella and cream cheese in a microwave-safe bowl for 1 minute, then stir and heat for another 30 seconds to 1 minute until fully melted.
  2. Add the egg to the melted cheese mixture and stir until combined.
  3. In a separate bowl, mix the dry ingredients: almond flour, baking powder, and oat fiber.
  4. Combine the dry ingredients with the cheese and egg mixture, mixing until a dough forms.
  5. If the dough is too sticky, refrigerate it for a short time to make it easier to handle.
  6. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  7. Divide the dough into 6 equal pieces, roll each piece into a snake shape, and form into a ring by pinching the ends together.
  8. Place the bagels on the prepared baking sheet, optionally topping with your favorite seasoning.
  9. Bake for about 12 minutes or until the bagels are golden brown.
  10. Allow to cool slightly before removing from the baking sheet.
