Instructions
- Combine the orange segments, orange juice, lemon juice, and sugar in a large saucepan and bring to a low boil over medium heat, stirring frequently.
- Once boiling, reduce the heat to medium-low, add a pinch of salt, and stir. Simmer for about 30 minutes.
- Add the thyme and orange zest, and continue cooking until the mixture reduces by about a third, achieving a thick, syrupy consistency.
- Remove from heat and let cool before transferring to clean jars.
- Store in the fridge for a couple of weeks or freeze in freezer-safe jars.
