Tomato Jam

Ingredients

  • pounds grape or cherry tomatoes
  • 3 tablespoons minced shallot
  • 1 teaspoon minced garlic
  • ¼ cup coconut sugar or organic cane/brown sugar
  • cup white wine vinegar
  • 2 tablespoons water
  • 1 teaspoon salt
  • 1 teaspoon dried thyme

Instructions

  1. Combine the tomatoes, minced shallot, minced garlic, coconut sugar, vinegar, water, and salt in a medium saucepan.
  2. Bring the mixture to a low boil for about 5 minutes.
  3. Reduce to a simmer and cook for about 30-45 minutes, stirring intermittently, until it thickens to a jam-like consistency.
  4. Stir in the dried thyme and set aside to cool completely.
  5. Transfer the jam to a sealed jar or container and store in the refrigerator for up to 1 week.
