Caramelized Onion Jam

Instructions
- Combine diced onions with 2 teaspoons of salt in a bowl and let sit for 60 minutes.
- Heat olive oil in a large frying pan over medium heat.
- Add the onions and their liquid to the pan and cook until translucent, about 10 minutes.
- Stir in black pepper and 1 tablespoon of thyme, then reduce heat and add balsamic vinegar.
- Cook for about 10 minutes until the mixture thickens.
- Increase heat to medium-high, add sugar, and stir until combined.
- Cook for about 15 minutes, stirring occasionally, until the mixture thickens further.
- Remove from heat, mix in remaining thyme, and allow to cool before seasoning with salt.
