Caramelized Onions

Ingredients

The onions

  • 1 large yellow or white onion

The cooking fat

  • 1 Tbsp. unsalted butter
  • 1 Tbsp. olive oil

Seasoning

  • 1 tsp. kosher salt
  • 1 Tbsp. aged sherry vinegar
  • ½ tsp. freshly cracked black pepper

Miscellaneous

  • time + patience

Instructions

  1. Cut both ends off the onion and slice it in half lengthwise.
  2. Peel the onion halves and lay them cut side down on a cutting board.
  3. Slice the onion into 1/8 inch thick half moons.
  4. Heat a sauté pan over medium heat and add butter and olive oil.
  5. Once melted, scatter the onion slices into the pan and toss to coat.
  6. Sprinkle with kosher salt and stir to mix.
  7. Cook for ten minutes, then stir and reduce heat to medium-low.
  8. Stir every ten to fifteen minutes for about 30-40 minutes until caramelized.
  9. Optionally, add sherry vinegar and black pepper in the last five minutes.
  10. Remove from heat and cool before storing.
