Caramelized Onions

yellow or white onion

aged sherry vinegar

Instructions
- Cut both ends off the onion and slice it in half lengthwise.
- Peel the onion halves and lay them cut side down on a cutting board.
- Slice the onion into 1/8 inch thick half moons.
- Heat a sauté pan over medium heat and add butter and olive oil.
- Once melted, scatter the onion slices into the pan and toss to coat.
- Sprinkle with kosher salt and stir to mix.
- Cook for ten minutes, then stir and reduce heat to medium-low.
- Stir every ten to fifteen minutes for about 30-40 minutes until caramelized.
- Optionally, add sherry vinegar and black pepper in the last five minutes.
- Remove from heat and cool before storing.
