Ingredients

The onions

  • 4 medium yellow onions

The cooking fat

  • 2 tablespoons extra-virgin olive oil

The seasoning

  • ½ teaspoon sea salt

Instructions

  1. Slice the onions evenly and separate the layers.
  2. Heat olive oil in a 12-inch cast iron skillet over medium heat.
  3. Add the onions and sauté for 5 minutes until they start to soften.
  4. Add the salt, reduce heat to medium-low, and cook for 50 to 80 minutes, stirring occasionally.
  5. If the onions stick to the pan, reduce the heat to low or add a splash of water.
  6. For extra caramelization, increase the heat at the end while stirring continuously.
