  • 2 large yellow onions

  • 1 teaspoon sea salt
  • 1 tablespoon water

Instructions

  1. Slice the onions into 1/8 to 1/4 inch thick slices.
  2. Heat a cast iron or carbon steel pan on medium-high and add the onions without oil for 5 minutes.
  3. Add olive oil and salt, stirring for a minute, then reduce the heat to medium-low.
  4. Stir the onions every 5-10 minutes for about 40 minutes until they are caramel in color and greatly reduced.
  5. Deglaze the pan with water, scraping up the browned bits from the bottom.
