Instructions
- Slice the onions into 1/8 to 1/4 inch thick slices.
- Heat a cast iron or carbon steel pan on medium-high and add the onions without oil for 5 minutes.
- Add olive oil and salt, stirring for a minute, then reduce the heat to medium-low.
- Stir the onions every 5-10 minutes for about 40 minutes until they are caramel in color and greatly reduced.
- Deglaze the pan with water, scraping up the browned bits from the bottom.
