Ingredients

  • 2 tablespoons butter
  • 1 tablespoon canola oil
  • 3 large yellow onions
  • 1 teaspoon kosher salt
  • 3 sprigs fresh thyme (leaves only)
  • 1 tablespoon white balsamic vinegar (optional)

Instructions

  1. Melt the butter with canola oil in a skillet over medium-high heat.
  2. Add sliced onions, kosher salt, and fresh thyme, cooking for 5 minutes until they start to soften.
  3. Reduce heat to medium-low, cover, and cook, stirring every 10-15 minutes.
  4. If onions begin to burn, add a splash of water or broth and scrape the fond from the pan.
  5. Add vinegar in the last 10 minutes of cooking if desired.
  6. Cook for up to 1 hour until onions are deep and rich in color.
