Instructions
- Melt the butter with canola oil in a skillet over medium-high heat.
- Add sliced onions, kosher salt, and fresh thyme, cooking for 5 minutes until they start to soften.
- Reduce heat to medium-low, cover, and cook, stirring every 10-15 minutes.
- If onions begin to burn, add a splash of water or broth and scrape the fond from the pan.
- Add vinegar in the last 10 minutes of cooking if desired.
- Cook for up to 1 hour until onions are deep and rich in color.
