Caramelized Onions

onions, about 5 large yellow onions, sliced

red wine vinegar or red wine (optional)
Instructions
- Heat the oil in a large pan over medium heat.
- Add the onion slices and stir to coat them with oil, then add a pinch of salt.
- Sauté the onions for about 5 to 8 minutes until they begin to turn translucent, then reduce the heat to medium-low.
- Continue to stir occasionally, adding a splash of water if the onions get dry, about 2 tablespoons at a time.
- Scrape the fond from the bottom of the pan and mix it back into the onions for flavor.
- Cook for about 30 more minutes until the onions reach your desired color and texture.
- In the last few minutes, add a splash of red wine vinegar and swirl it into the onions.
- Remove from heat and allow to cool before using or storing.
