Ingredients

The onions

  • 1 lb onions, about 5 large yellow onions, sliced

The cooking essentials

  • 2-3 tablespoons oil
  • ½ teaspoon sea salt
  • water as needed
  • 2 tablespoons red wine vinegar or red wine (optional)

Instructions

  1. Heat the oil in a large pan over medium heat.
  2. Add the onion slices and stir to coat them with oil, then add a pinch of salt.
  3. Sauté the onions for about 5 to 8 minutes until they begin to turn translucent, then reduce the heat to medium-low.
  4. Continue to stir occasionally, adding a splash of water if the onions get dry, about 2 tablespoons at a time.
  5. Scrape the fond from the bottom of the pan and mix it back into the onions for flavor.
  6. Cook for about 30 more minutes until the onions reach your desired color and texture.
  7. In the last few minutes, add a splash of red wine vinegar and swirl it into the onions.
  8. Remove from heat and allow to cool before using or storing.
