Bacon and Cranberry Onion Jam

Instructions
- Cook the bacon in a large, heavy pan until crisp, then remove it and drain on a paper towel.
- Chop the cooled bacon finely and set aside.
- In the same pan with the drippings, add onions, salt, and red pepper flakes, cooking until the onions soften and begin to brown.
- Cover and reduce heat, cooking for about 20 minutes.
- Remove the lid, increase heat, and add cranberries, bacon, and sugar, stirring until simmering.
- Reduce heat again, cover, and cook for another 30 minutes until the cranberries burst and the mixture thickens.
- Stir in balsamic vinegar and serve warm or at room temperature.
