Bacon and Cranberry Onion Jam

Ingredients

  • 6 ounces bacon
  • 4 cups sweet onions, halved and thinly sliced (about 2 medium onions)
  • 1 ½ teaspoons kosher salt
  • cup sugar
  • pinch red pepper flakes (more if desired)
  • 1 ½ pounds fresh cranberries
  • 2 tablespoons balsamic vinegar

Instructions

  1. Cook the bacon in a large, heavy pan until crisp, then remove it and drain on a paper towel.
  2. Chop the cooled bacon finely and set aside.
  3. In the same pan with the drippings, add onions, salt, and red pepper flakes, cooking until the onions soften and begin to brown.
  4. Cover and reduce heat, cooking for about 20 minutes.
  5. Remove the lid, increase heat, and add cranberries, bacon, and sugar, stirring until simmering.
  6. Reduce heat again, cover, and cook for another 30 minutes until the cranberries burst and the mixture thickens.
  7. Stir in balsamic vinegar and serve warm or at room temperature.
